2010 Catering and Wedding Reception Trends

We just love new beginnings... so here are a few of the design trends for the new year. 

Lighting: Since most parties and wedding receptions are outdoors in Florida, and at night time, there is a new interest in providing lighting with color.  For example, gel up-lighting can turn boring, beige walls into exclamation points.  Lighted Chinese lanterns, in different colors, also add lots of color the night sky.

Colors Styles:  
  If you want a vintage or art nouveau look, then champagnes, ivories and golds with texture add lots of style.  If the setting is garden, sage or celandon colors with amethyst are really pretty.  Contemporary colors - the new white color is black.  Tropical or beach settings are the vibrant aqua or  turquoise with accent colors of lime green.  One accent color that is really popular is eggplant for understated elegance.  Each color and style can now be matched to our extensive serving pieces, including vintage, tropical and contemporary.
 
Catering Services  TAPAS service (more than one bite - but the equivalent of a full dinner service and Guest Choice, Tableside (each guest is asked their food preference once they are seated for dinner which creates that fine dining experience) are the most popular.  In general, most clients are NOT doing cocktail services as their guests are all coming hungry, expecting a full dinner service.  Small bites for the after party might be a better alternative.  Buffets are being replaced by Action Stations with servers and chefs interacting with guests. After all, Surprise and Delight, should be the goal.

Go Green  
After one season of implementing GO Green, we have expanded the menu services to include organic beef and chicken options.  Our Vegan and Vegetarian menus now include options with rice and soya products and even our desserts.  The cost to GoGreen is not as significant as products are substituted that have the biggest impact.  For example, a salad made with organic mixed greens is not a significant cost difference then salad made with non-organic greens.  As your chef, we will walk you through the options.
